A.R.T. Community Cookbook: Egg Pie by Four Berger Mitchell

Egg Pie

Ingredients:

  • 1 dozen eggs

  • 3 green onions, sliced thin

  • 1 cup diced potatoes

  • 1 handful raw spinach

  • olive oil

Directions:

  1. Saute potatoes & onion in olive oil – 10 min.

  2. Add spinach – cook until wilted

  3. Whisk eggs in a bowl

  4. Add cooked vegetables

  5. Pour egg mixture into greased round pie tin.

  6. Bake 350 degrees 20 min. until knife is clean.
