Pick Yourself off the “Ground” Tomato Pie (AKA Pineapple Tomatillo)

Ingredients:

  • 4 ½ cups pineapple tomatillos or “ground” tomatoes

  • ¼ cup flour

  • ¼ cup sugar

  • 2 tbsp. milk

  • 2 pie crusts (store bought or homemade if you are daring)

Directions:

  1. Preheat oven 425°.

  2. Mix ground tomatoes (husks removed) with sugar & flour, toss thoroughly to coat.

  3. Line pie plate w/ bottom crust.

  4. Pour coated pineapple tomatillos/ground tomatoes into crust.

  5. Top with crust #2, slice to vent.

  6. Brush crust with milk.

  7. Sprinkle with sugar.

  8. Put in oven for 15 minutes. Turn down oven to 375°. Cook 20-25 minutes more.

  9. Cool.
