Arroz Doce (Rice Pudding)

From the Kitchen of: The de Lima Family

 

Ingredients:

  • 2 cups water

  • 1 cup white rice

  • 4 egg yolks

  • 2 cups hot whole milk

  • 1 cup sugar

  • 1 lemon rind

  • Cinnamon powder

Directions:

  1. Bring water to a boil in medium saucepan.

  2. Add rice & cover, simmering for 20 min.

  3. Add milk, sugar, lemon rind and egg yolks, stirring constantly until reaching a thick consistency, about 15-20 min.

  4. Remove from heat and pour onto one large serving plate.

  5. Set aside and cool for 1 hour.

  6. Cover with cinnamon powder.

  7. Serve at room temp, but refrigerate uneaten portion.
