A.R.T. Community Cookbook: Banana-Coconut Cake by The Boston Baking Brigade

Banana-Coconut Cake

Ingredients:

  • 3 bananas, mashed

  • 1 ½ cup milk

  • 3 cups flour

  • 3 eggs

  • 1 ½ sticks of butter

  • 1 tsp. baking powder

  • 1 tsp. baking soda

  • 1 tsp. salt

  • 1 tsp. coconut extract

  • 1 ½ cups sugar

Directions:

  1. Cream together butter and sugar.

  2. Add in eggs one at a time.

  3. Add in flour and eggs, alternating

  4. Add in all remaining ingredients and mix to combine.

  5. Bake at 275° for 1 hour in two 9”x9” pans.

  6. Place directly in freezer to cool for 45 mins. Serve.
