Blueberry Pie

From the Kitchen of: Doc Staff

 

Ingredients:

  • Crust:

    • 2 ½ cups flour

    • ¼ cup sugar

    • 2 sticks butter (frozen)

    • 1 cup ice water

  • Filling:

    • 2 boxes blueberries

    • juice 1 lemon

    • ½ cup sugar

    • 2 tbsp. flour

Directions:

  1. Preheat oven to 425. Reduce to 375 when pie is added.

  2. Put flour, sugar and frozen butter pieces in mixer

  3. Mix on medium until like corn meal.

  4. Add ice water and mix until ball forms.

  5. Roll out & place in pie pan.

  6. Toss filling ingredients, dot butter; put on top of pastry

  7. Bake at 375.
