Blueberry-Raspberry Pie with Almond Crust

Ingredients:

  • Pie

    • 1 quart fresh blueberries

    • 1 pint fresh or frozen raspberries

    • 3 tbsp corn starch

    • ¾ cup sugar

  • Crust

    • 1 ¼ cup flour

    • ½ cup slivered almonds

    • ¼ cup sugar

    • ¼ tsp. salt

    • 1 stick unsalted butter, chilled

    • ¾ tsp. almond extract

    • approx. 2 tbsp. ice water

Directions:

for crust:

  1. Blend flour, almonds, sugar + salt in processor until nuts are finely ground.

  2. Cut butter into pieces + add.

  3. Pulse until mixture resembles coarse meal.

  4. Mix in almond extract + enough water to form clumps.

  5. Knead briefly to combine.

  6. Flatten into disk.

  7. Wrap in plastic + refrigerate at least 2 hours.

  8. Roll out dough between sheets of waxed paper.

  9. Transfer to pie plate.

  10. Freeze 15 min.

  11. Bake at 375 degrees for about 20 minutes.

for pie:

  1. Pick out 2 cups of best-looking blueberries + set aside.

  2. Blend raspberries in processor.

  3. Pour into sieve + press to extract as much juice as possible.

  4. Discard seeds.

  5. Should be about 1 cup of juice.

  6. Pour puree into saucepan + add cornstarch, sugar, + 1 cup blueberries. Bring to boil over moderate heat, stirring.

  7. When thickened, add another cup of blueberries + reheat briefly, stirring – cook just until berries heated through.

  8. Scrape mixture into baked almond crust.

  9. Smooth the top.

  10. Garnish w/ reserved 2 cups blueberries.

  11. Serve at room temperature.
