Chicken Pot Pie

Ingredients:

Filling
-
3 whole chicken breasts
-
olive oil
-
5 cups chicken stock
-
2 chicken bouillon cubes
-
6 tbsp. butter
-
2 cups chopped onion
-
¾ cup flour
-
¼ cup heavy cream
-
2 cups blanched carrots
-
1 ½ cups frozen small onions and peas
-
½ cup parsley
-

For pastry:
-
3 cups flour
-
1 ½ tsp. salt
-
1 tsp. baking powder
-
1 cup butter
-
½ – ⅔ cup ice water
-
1 egg beaten w/ 1 tbsp. water

Directions:

Preheat oven to 350°

Roast chicken breast w/ olive oil, salt, and pepper for 35-40 mins. Cut into pieces.

In a small saucepan, heat chicken stocks and bouillon cubes.

In a large pot, melt butter and sauté the onions.

Add flour and cook over low heat for 2 min. Add chicken stock and simmer for 1 min, until thick.

Add 1 tsp. salt, pepper, and heavy cream. Add cubed chicken, carrots, peas, onions, and parsley. Mix well.

Pastry: Mix flour, salt, and baking powder in food processer.

Add butter and pulse until butter is all coated in flour and in small pieces.

Add ice water and knead into ball. Wrap in plastic and refrigerate for 30 min.

Preheat oven to 375°.

Divide filling into 6 bowls and roll a pastry circle on top. Brush dough with egg wash and cut a slit in the top.
- Bake for 1 hour or until golden brown and bubbling out of top.
