A.R.T. Community Cookbook: Chicken Pot Pie

Chicken Pot Pie (Damian’s Three Favorite Things)

 

Ingredients:

  • 1 pie crust

  • 1 onion, chopped

  • garlic (optional)

  • 1 cup chopped celery

  • 1 cup sliced carrots

  • 3.5 lbs chicken thighs

  • 2 cups frozen peas

  • ½ cup butter

  • ½ cup flour

Directions:

  1. Saute onions, carrots, and celery until it smells good and looks delicious.Maybe throw some garlic in there, too.

  2. Meanwhile, boil chicken over the stove until cooked through, unless you like raw, nasty chicken. When chicken is cooked, shred and set aside.

  3. Add butter to vegetables and melt over med-low heat. Whisk in flour and make a roux, using water from chicken.

  4. Add pear. And salt. Maybe rosemary.

  5. Put that nonsense in a pie, bake at 350° for 1 hour.
