Eat Your Vegetables Pie

Ingredients:

  • Crust:

    • 1 potato (grated)

    • ½ onion chopped

    • 1 egg

  • Filling:

    • 1 cauliflower

    • 1 onion chopped

    • olive oil

    • thyme & oregano

    • 3 eggs

    • 1 cup milk

Directions:

  1. Grated potato, mix together with onion & egg and put in greased pie pan.

  2. Bake in 375 degree oven for 45 min.

  3. Let cool.

  4. Sprinkle w/ at least a cup of shredded cheddar cheese.

  5. Saute onion & cauliflower in 2 tbsp. olive oil until soft.

  6. Add herbs (½ tsp. or as much as you like).

  7. Put on top of cheese & potato crust.

  8. Make custard of eggs & milk.

  9. Salt & pepper to taste.

  10. Pour over pie.

  11. Sprinkle w/ more cheese.

  12. Bake for about an hour or until knife comes out clean.
