First Rehearsal Blueberry Pie

Ingredients:

1 pie crust (blind baked)

¾ cup sugar

3 tbsp. cornstarch

1/8 tsp. salt

¼ cup cold water

5 cups fresh blueberries

1 tbsp. butter

1 tbsp. lemon juice
Directions:

In a saucepan over medium heat, combine sugar, cornstarch, salt, and water until smooth.

Add 3 cups of washed blueberries.

Bring to a boil and cook for 2 mins until thickened and bubbly.

Remove from heat.

Add butter, lemon juice, and remaining washed blueberries. Stir until butter is melted.

Allow to cool. Pour into cooled pastry shell.
- Refrigerate until serving (best overnight to firm up filling).
