First Rehearsal Blueberry Pie

From the Kitchen of: Anna F.

 

Ingredients:

  • 1 pie crust (blind baked)

  • ¾ cup sugar

  • 3 tbsp. cornstarch

  • 1/8 tsp. salt

  • ¼ cup cold water

  • 5 cups fresh blueberries

  • 1 tbsp. butter

  • 1 tbsp. lemon juice

Directions:

  1. In a saucepan over medium heat, combine sugar, cornstarch, salt, and water until smooth.

  2. Add 3 cups of washed blueberries.

  3. Bring to a boil and cook for 2 mins until thickened and bubbly.

  4. Remove from heat.

  5. Add butter, lemon juice, and remaining washed blueberries. Stir until butter is melted.

  6. Allow to cool. Pour into cooled pastry shell.

  7. Refrigerate until serving (best overnight to firm up filling).
