Fudgy Chocolate Cream Pie

From the Kitchen of: Teddy Mitchell

 

Ingredients:

  • 9” pie crust, baked

  • 1 ¼ cups white sugar

  • 2 tbsp. flour

  • 2 tbsp. cornstarch

  • ¼ tsp. salt

  • 1 ½ cups milk

  • 4 egg yolks

  • 2 (1 oz.) squares of unsweetened chocolate, chopped

  • 1 tbsp. butter

  • 1 tsp. vanilla extract

Directions:

  1. In a medium saucepan, combine sugar, flour, cornstarch and salt. Whisk to combine.

  2. In a medium bowl, whisk milk and egg yolks until smooth.

  3. Gradually stir into sugar mixture.

  4. Cook over medium heat, stirring constantly until mixture thickens and comes to a full boil. Boil and stir for 1 min.

  5. Remove from heat, stir in chocolate, butter, and vanilla until melted.

  6. Pour into pie shell.

  7. Place plastic wrap over filling to prevent skin from forming.

  8. Chill for several hours.

  9. Top with whipped cream/meringue/chocolate curls if desired.
