GO BLUEberry Peach Pie!

Ingredients:

Crust
-
1 cup whole wheat pastry flour

1 cup spelt flour
-
2 sticks of butter
-
1 egg yolk
-
½ cup ice water
-
pinch o’ salt
-

Filling
-
4 cup peaches cut in slices
-
3 cup blueberries (ME)
-
2 tbsp. flour
-
1 cup dark brown sugar
-
½ cup raspberry jam
-
Directions:

Preheat to 425°.

Combine crust ingredients in food processor.

Divide into 2 discs, refrigerate.

In a medium bowl, combine peaches, blueberries, sugar, flour, and jam.

Roll out one disk and put it in a pie plate.

Add fruit mixture.

Roll out the second disk, place over the fruit.
-
Crimp the edges.
-
5 slits on top.
- Bake 45 min.
