GO BLUEberry Peach Pie!

Ingredients:

  • Crust

    • 1 cup whole wheat pastry flour

    • 1 cup spelt flour

    • 2 sticks of butter

    • 1 egg yolk

    • ½ cup ice water

    • pinch o’ salt

  • Filling

    • 4 cup peaches cut in slices

    • 3 cup blueberries (ME)

    • 2 tbsp. flour

    • 1 cup dark brown sugar

    • ½ cup raspberry jam

Directions:

  1. Preheat to 425°.

  2. Combine crust ingredients in food processor.

  3. Divide into 2 discs, refrigerate.

  4. In a medium bowl, combine peaches, blueberries, sugar, flour, and jam.

  5. Roll out one disk and put it in a pie plate.

  6. Add fruit mixture.

  7. Roll out the second disk, place over the fruit.

  8. Crimp the edges.

  9. 5 slits on top.

  10. Bake 45 min.
