I <3 Amsterdam Carrot Pie

From the Kitchen of: Harvey the Rabbit at The Star Pleasure Cafe

Ingredients:

  • Filling:

    • 1 ½ lbs. shredded carrots

    • 1 large onion, caramelized

    • Salt

    • Pepper

    • Paprika

    • Dill

    • Parsley

    • 1 egg

    • 1 cup of cottage cheese

    • ⅔ cup shredded cheddar cheese

    • 3 tbsps. wheat germ

  • Crust:

    • Flour

    • Butter

    • Chilled water

Directions:

  1. Crust: Cut tabs of butter and several tbsp. water into flour and mix.

  2. Roll out and place into pie tin. Aerate by poking crust with fork.

  3. Slice onions and cook over low heat with butter and salt to caramelize.

  4. Add shredded carrots to pan. Continue to cook until carrots caramelize.

  5. In a metal bowl, beat one egg and add cottage cheese and shredded cheddar cheese.

  6. Stir until well-blended.

  7. Add ground pepper, dill and fresh parsley to taste.

  8. Fill pie crust with caramelized onion and carrot mixture.

  9. Fold in seasoned egg and cheese mixture. Top with wheat germ and paprika.

  10. Place on oven’s middle rack and bake for 40 minutes at 350° or until top is golden brown. Enjoy!
