A.R.T. Community Cookbook: I Just Moved and Everything I Own is in Boxes Pie (Coconut Raspberry Lime Frozen Pie) by Madeline Heising

I Just Moved and Everything I Own is in Boxes Pie (Coconut Raspberry Lime Frozen Pie)

From the Kitchen of: Madeline Heising (@madelineheising, collegiatevegan.com)

Ingredients:

  • 1 pre-made graham cracker crust

  • 1 can full-fat coconut milk

  • 2 tbsp. coconut oil, melted

  • Zest of two limes (one tablespoon)

  • Juice of two limes (about ¼ cup)

  • ¼ cup agave (this makes a very sweet pie, feel free to use less)

  • Frozen raspberries, to garnish (optional)

Directions:

  1. Blend coconut milk, coconut oil, lime juice, ½ of zest, and agave in a blender until smooth.

  2. Pour into pie shell, sprinkle with remaining zest, and leave in the freezer for several hours to set.

  3. Let thaw on the counter one hour before serving if you want to be normal, or eat frozen if it’s really hot out like it is here.

  4. Sprinkle with frozen raspberries before serving.

Jenna is a waitress and expert pie maker, is stuck in a small town and a loveless marriage. Her customers, co-workers, and the town’s handsome new doctor all offer her conflicting recipes for happiness—but Jenna ultimately has to decide for herself. This poignant and uplifting new musical celebrates friendship, motherhood, and the courage it takes to pluck a long abandoned dream off the shelf. Waitress is a new musical directed by Diane Paulus, featuring music and lyrics by Grammy-nominated singer-songwriter Sara Bareilles.
