Impossible Pie

From the Kitchen of: Carol B.

 

Ingredients:

  • 3 cups unpeeled grated zucchini

  • 1 cup bisquick

  • ½  – 1 cup of cheddar and/or swiss cheese, grated

  • ½ cup chopped onion

  • 2 tbsp. chopped parsley

  • ½ cup vegetable oil

  • 4 eggs slightly beaten

  • 1 fresh sliced tomato

  • Parmesan cheese

Directions:

  1. After grating zucchini, squeeze out excess moisture.

  2. Mix together all ingredients except tomato slices and parmesan.

  3. Put in greased casserole, lay slices of tomato on mixture, sprinkle with parmesan.

  4. Bake for 30-40 minutes @ 350°.
