Jessie Mueller Makes Me Cry Pie (Banana Raspberry)
From the Kitchen of: Lulu
Ingredients:
-
2 cups raspberries
-
1.5 bananas
-
¼ cup sugar
-
2 tbsp. cornstarch
-
¼ tbsp. salt
-
½ tbsp. cinnamon
-
2 pie crusts
-
1 egg
Directions:
-
Mix sugar, cornstarch, salt, and cinnamon in large bowl. After well blended, add raspberries. Avoid breaking as much as possible. Place in fridge.
-
Cut the first pie crust into ½” strips.
-
Brush the second pie crust (inside) with a thin layer of egg white. This will keep it from getting soggy later.
-
Cut banana into ¼” slices and line the second pie crust with them.
-
Preheat oven to 350°. From this point, work quickly so your oven doesn’t get too hot.
-
Pour the pie filling (from the fridge) over top of the bananas. Smooth it with the round side of a spoon.
-
Create a lattice top on the pie, using the strips. With a fork, press the ends into the crust until they stick.
-
Brush the lattice strips with egg white, sprinkle with sugar and cinnamon.
-
Wrap the crust in foil.
-
Place pie in center of oven. Bake for 50 minutes. Let cool for at least 1 hour before eating.
-
Serve while crying quietly as Jessie Mueller sings in the background.
-
Repeat.
