Jessie Mueller Makes Me Cry Pie (Banana Raspberry)

From the Kitchen of: Lulu

Ingredients:

  • 2 cups raspberries

  • 1.5 bananas

  • ¼ cup sugar

  • 2 tbsp. cornstarch

  • ¼ tbsp. salt

  • ½ tbsp. cinnamon

  • 2 pie crusts

  • 1 egg

Directions:

  1. Mix sugar, cornstarch, salt, and cinnamon in large bowl. After well blended, add raspberries. Avoid breaking as much as possible. Place in fridge.

  2. Cut the first pie crust into ½” strips.

  3. Brush the second pie crust (inside) with a thin layer of egg white. This will keep it from getting soggy later.

  4. Cut banana into ¼” slices and line the second pie crust with them.

  5. Preheat oven to 350°. From this point, work quickly so your oven doesn’t get too hot.

  6. Pour the pie filling (from the fridge) over top of the bananas. Smooth it with the round side of a spoon.

  7. Create a lattice top on the pie, using the strips. With a fork, press the ends into the crust until they stick.

  8. Brush the lattice strips with egg white, sprinkle with sugar and cinnamon.

  9. Wrap the crust in foil.

  10. Place pie in center of oven. Bake for 50 minutes. Let cool for at least 1 hour before eating.

  11. Serve while crying quietly as Jessie Mueller sings in the background.

  12. Repeat.

Jenna is a waitress and expert pie maker, is stuck in a small town and a loveless marriage. Her customers, co-workers, and the town’s handsome new doctor all offer her conflicting recipes for happiness—but Jenna ultimately has to decide for herself. This poignant and uplifting new musical celebrates friendship, motherhood, and the courage it takes to pluck a long abandoned dream off the shelf. Waitress is a new musical directed by Diane Paulus, featuring music and lyrics by Grammy-nominated singer-songwriter Sara Bareilles.
