Key Lime Pie (“Key to a Great Pie” Pie)

From the Kitchen of: Zoe Armstrong (age 14)

 

Ingredients:

  • 1 graham cracker pie crust (preferably homemade)

  • 1 pkg low-fat (Neufchatel) cream cheese, softened

  • 1 can sweetened condensed milk

  • ½ cup freshly squeezed lime juice

  • 1 tbsp. lime zest

Directions:

  1. Prepare graham cracker crust in 9” pie pan. Refrigerate.

  2. Beat cream cheese with electric or stand-up mixer.

  3. Gradually add sweetened condensed milk, mixing until combined.

  4. Add lime juice and zest, mix on low until combined well (2 min). Pour into prepared crust.

  5. Refrigerate 8 hours, until firm.
