Lemon Pie

Ingredients:

1 cup sugar

¼ tsp. cream of tartar

4 eggs
-
3 tbsp. lemon juice
-
1 tbsp. lemon zest
-
⅛ tsp. salt
-
1 pint heavy cream
-
Toasted coconut
Directions:

Sift together ½ cup sugar & cream of tartar.

Beat 2 egg whites to stiff peaks.

Add sugar very slowly while mixing.

Spread mixture into crust shape into a buttered pie plate.

Bake for 1 hour at 275 degrees.

Cool.

Beat 4 egg yolks lightly with lemon juice. lemon zest, ½ cup sugar & salt.

Stir in double boiler approx 8 min until thick and custardy.

Cool.

Whip heavy cream & fold in lemon curd.
- Put in cooled crust & top w/ coconut.
