Lemon Surprise

From the Kitchen of: Helen Purcell (Age 96)

 

Ingredients:

  • 1 box lemon Jello

  • 1 can (15 oz.) evaporated milk (chilled)

  • 4 tbsp. sugar

  • 4 tbsp. lemon zest

  • Juice of 4 lemons

  • 1 cup water

Directions:

  1. Dissolve Jello in boiling water, add sugar, lemon juice and zest.

  2. Chill until soft set.

  3. Whip evaporated milk in chilled bowl until it holds soft peaks.

  4. Fold into Jello mixture and allow to set in refrigerator for 4 hours.

  5. Serve with ginger snaps.
