A.R.T. Community Cookbook: MA Quiche Lorraine

MA Quiche Lorraine

 

Ingredients:

  • Pastry:

    • 250 g flour

    • 5 oz. butter

    • 1 egg

    • A pinch of salt

  • Filling:

    • 100 g bacon

    • 250 g heavy cream (or sour cream)

    • 3 eggs

    • 100 g gruyere

    • 4 onions finely sliced

    • 1 tbsp. butter

    • 1 tbsp. oil

    • Mushrooms (optional)

    • Salt

    • Pepper

    • Nutmeg

Directions:

  1. Preheat oven to 350°.

  2. Put the flour and salt in a large bowl, add the butter and rub with your fingertips.

  3. Add the egg and a little cold water if necessary (2-3 tsp.).

  4. Bring the dough together with your hands and shape into a ball. Wrap it in plastic and put it in the fridge to rest for at least 30 mins.

  5. Roll the pastry into a circle on a lightly floured surface and line a tart tin.

  6. Put the bacon in a frying pan for just 5 mins.

  7. Mix together the cream and eggs and season w/ salt, pepper, and nutmeg. Then add bacon and grated gruyere. Let cool.

  8. Melt butter and oil in a heavy-based saucepan and add onions, cook for 10 mins, then add mushrooms. Chill.

  9. When cool, add melt with cream, eggs, and bacon and put in tart.

  10. Bake for 30 mins or until golden brown.
