Mona Bailey’s Pecan Pie

Ingredients:

1 pie crust
-
1 ¼ cup light brown sugar

¾ stick un-salted butter
-
¾ cup light corn syrup
-
2 tsp. vanilla
-
3 lg. eggs
-
2 cups pecans
-
¼ tsp. salt
Directions:

Preheat oven to 350°

Melt butter in saucepan.

Add brown sugar, whisking until smooth.

Remove from heat + whisk in corn syrup, vanilla, and salt.

Lightly beat eggs in medium bowl.

Whisk together eggs in medium bowl.
-
Place pecans in pie shell.
-
Pour syrup over pecans evenly.
-
Bake approx 45 min or until center is set.
-
Cool completely.
- Serve w/ breyers vanilla ice cream.
