My Favorite Pie Crust
From the Kitchen of: Anna F. (Joy of Cooking)
Ingredients:

2 ½ cup flour

1 tsp. white sugar or 1 tbsp. powdered sugar

1 tsp. salt

2 sticks (½ lb.) cold butter

¼ cup shortening
-
⅓ cup ice cold water
Directions:

Mix together flour, sugar, and salt.

Add the butter to the dry ingredients.

Using a pastry blender, chop the butter into pea sized pieces.

Add shortening and cut into mixture swiftly.

Continue to chop with pastry blender until mixture looks like coarse crumbs.

Drizzle water over the mixture and mix with hands or spatula until dough is evenly moist and begins to form small balls. If the balls stick together, you’ve added enough water. Otherwise, continue to add a tbsp. at a time of cold water.

Press with your hands until the dough coheres.

Divide the dough in half, press each half into a flat dish and roll in plastic wrap.

Refrigerate for at least 30 mins or up to 2 days before rolling. The dough can also be wrapped airtight and frozen for up to 6 months.

Thaw completely before rolling.
- Makes 2 9”-10” pie crusts or one covered fruit pie.
