Peach Cherry Pie

From the Kitchen of: Renee of Petsi Pies

 

Ingredients:

  • Filling:

    • 6 very ripe peaches (dip into boiling water to make them peel easier)

    • 2 cups pitted sour cherries

    • 2 tbsp. cornstarch

    • ½ c sugar

    • 1 tsp. cinnamon

    • 1 tsp. vanilla

  • Crust:

    • 8 oz. butter

    • 2 ½ cup flour

    • 1 tsp. salt

    • 6-8 tbsp. very cold vodka

Directions:

  1. Place butter, flour, and salt into food processor. Pulse till big + crumbly.

  2. Put in a bowl and add half of the vodka. If it holds together, don’t add more.

  3. Mix peaches, cherries, cornstarch, sugar, cinnamon, and vanilla.

  4. Roll out chilled pie dough. Fill and bake for 40-50 mins at 325°.
