Pie Crust

Pie is farm food, use-up-what’s-around food. Make a flaky crust and put anything in it.
Ingredients:

2 ½ cup flour (preferably 1 ½ cup all purpose + 1 cup pastry)

½ cup (1 stick) butter

½ cup crisco
-
1 tsp. salt

6-8 tbsp. ice water
Directions:

Put the flour, salt, fat in the fridge for ½ hour.

Cut the fat into the flour + salt until it turns yellow + grainy, but still has some marble size fat chunks.

Add 6 tbsp ice water + try to bring it all together. Add up to 2 more tbsp water until you can squeeze a handful and it sticks.

Take a handful at a time + schmear it out on the counter so the big pieces of fat flatten out. When all the dough has been schmeared, gather it together, divide it into 2 more or less equal disks, wrap in plastic + chill ½ hour before rolling.
- Don’t suffer over pre-dough + don’t add lots of fancy extra ingredients. Should take 5 min to pull it together.
