Potato Souffle
From the Kitchen of: Shoubman Family
Ingredients:

4 large potatoes

1 8 oz. cream cheese
-
1 medium onion (finely chopped)

3 tbsp. flour
-
1 tsp. salt
-
¼ tsp. white pepper
-
3 eggs
-
1 can fried onion rings
Directions:

Bake potatoes + scoop out into mixing bowl.

Add cream cheese, eggs, onions
-
Add flour, salt + pepper
-
Mix until blended.

Pour into ceramic dish

Pour onion rings on top

Bake covered with tin foil 30 minutes at 350 degrees

Remove foil + bake another 20 minutes.

Can be made 2 days ahead. Can be frozen before baking. Bake when ready to serve.
- Can be doubled for 16 people.
