Procrastinator’s Perfect Peach Pie

Ingredients:

6-8 peaches

2 9” pie crusts

3 tbsp. cornstarch

juice from ½ lemon

¼ cup cane sugar + extra for crust

¼ cup light brown sugar

2 tbsp. butter, cut into pieces

2 tbsp. milk (optional)

You can add ¼ teaspoon almond extract to the filling if you want
Directions:

Preheat oven to 425°.

Peel, pit, and slice peaches, mix in a bowl with lemon juice, both sugars, cornstarch. Let sit for 10 minutes, stirring occasionally.

Pour into bottom crust and cover with lattice or whole crust (poke air holes). Brush crust with milk (optional) and sprinkle with remaining sugar.

Bake for 25 minutes, reduce oven temp to 325° and cover edges of crust with aluminum foil to prevent over-brown edges. Bake for an additional 30-35 minutes. Let cool for at least 20 minutes before serving.

Tip: serve with ice cream on top.
