Pumpkin Ice Cream Pie

Ingredients:

Baked 9” pie shell

¼ cup honey
-
¾ cup canned or cooked pumpkin

½ tsp. cinnamon
-
¼ tsp. salt
-
¼ tsp. ginger
-
¼ tsp. nutmeg
-
Dash ground cloves
-
1 qt. (4 cups.) vanilla ice cream
Directions:

Combine honey, pumpkin, cinnamon, salt, ginger, nutmeg + cloves.

Bring to a boil over med. heat, stirring constantly. Let cool.

Beat into slightly softened ice cream.

Spread in pie crust. Freeze till firm, then cover w/ tin foil. Leave out 5-10 minutes before serving so it’s easier to cut.

Garnish with whipped cream dusted with nutmeg or with pecans and a drizzle of maple syrup.
