A.R.T. Community Cookbook: Pumpkin Maple Pie by Claire

Pumpkin Maple Pie

From the Kitchen of: Claire

 

Ingredients:

  • 1 16 oz. can solid pack pumpkin

  • 1 cup whipping cream

  • ¾ cup maple syrup

  • 3 lg. eggs

  • 1 tbsp. flour

  • ½ tsp. natural maple flavor

  • ½ tsp. cinnamon

  • ¼ tsp. ground ginger

  • ¼ tsp. ground nutmeg

  • pinch salt

  • 1 uncooked 9” pie crust

  • ~2 cups maple whipped cream:

    • 1 cup chilled whipping cream

    • 3 tbsp. pure maple syrup

Directions:

  1. Set oven temp. to 400.

  2. Line pie crust w/ foil, leaving 3 in. overhang. Fill foil w/ beans or pie weights. Fold extra foil gently over crust edges.

  3. Bake ~15 min. until crust is set.

  4. Remove foil & beans.

  5. Cool crust slightly.

  6. Reduce oven temperature to 350 degrees.

  7. Whisk all remaining ingredients (except maple whipped cream) to blend in bowl.

  8. Pour filling into crust.

  9. Bake until filling is set, covering crust edges with foil if browning too quickly, about 55 minutes.

  10. Cool completely.

  11. Can be prepared 1 day ahead.

  12. Chill.

  13. Cut pie into wedges and serve with maple whipped cream (whip cream w/syrup in large bowl until soft peaks form)
