Pumpkin Pie
From the Kitchen of: Elaine Loehmann by way of Laura Laraburre and Bon Appetit
Ingredients:

Crust

1 ½ sticks unsalted butter (melted)

¼ cup sugar

1 tbsp. confectioner’s sugar

Filling:
-
1 ½ cups evaporated milk
-
1 cup brown sugar
-
1 ½ cups pumpkin
-
½ tsp. each: salt, ginger, nutmeg
-
1 tsp. cloves
-
2 large eggs
-
¼ cup maple syrup
-
Directions:
-
375 degree oven, 10 in. deep pie pan

Mix dry ingredients. Stir in butter. Press into and up sides of the pan.

In a small saucepan heat milk & sugar until dissolved.

Let cool.

Blend all but eggs & syrup. Add milk mixture. Add eggs, beat well. Add syrup.

Pour into pie shell. Cover edges with aluminum foil or pie ring.

Bake 50 min. (maybe longer)
- Will look a little soupy in middle but continues to firm up when it is out of the oven.
