Ruben Red Rhubarb Pie

From the Kitchen of: Mariah Ruben

 

Ingredients:

  • Pick fresh rhubarb from the backyard. About 5 stalks to make 2 cups.

  • 4 cups fresh strawberries

  • 1 cup sugar

  • 1 tbsp. minute tapioca

  • ½ tsp. vanilla

Directions:

  1. Combine ingredients into eight inch pie crust.

  2. Dot with butter + cinnamon.

  3. Place pie crust on top (laced looks best).

  4. Cook in preheated 425° for 10 min + then 25 min at 350° until pie crust is brown + fillin is bubbling.
