A.R.T. Community Cookbook: Sweet Potato & Beet Galette by Annie Pates

Sweet Potato & Beet Galette

From the Kitchen of: Annie Pates

 

Ingredients:

  • Pre-made pie crust

  • 2 sweet potatoes

  • 3 beets

  • gorgonzola cheese

  • thyme

  • olive oil

  • egg

Directions:

  1. Make pie crust and roll into rough circle ¼” thick

  2. Peel & thinly slice (⅛-¼”) beets & potatoes

  3. Coat beets & sweet potatoes in olive oil

  4. Layer beets & potatoes into crust leaving 1” border

  5. Sprinkle w/cheese & thyme

  6. Fold edges to cover edge of beets & potatoes

  7. Coat crust w/egg wash

  8. Bake at 375 degrees for ~25 min.
