Swimmin’ Fish Pie (for Rosh Hashanah)

From the Kitchen of: Caroline Jones

 

Ingredients:

  • Phyllo pastry

  • White fish (1 ½ lbs.)

  • Tomatoes

  • Basil

  • Rosemary

  • Onions

  • Olive Oil

  • Olives (pitted)

  • Pinch brown sugar

Directions:

  1. Take your pie dish

  2. Drape 3 leaves fillo one by one, brush with olive oil

  3. Cook onions slow ‘til caramelized. Add tomatoes & basil, cook ‘til thick. Add brown sugar to taste.

  4. Saute fish a little but not ‘til done.

  5. Put fish into phyllo/pie pan

  6. Pour tomato sauce over

  7. Drape 5 sheet phyllo one by one on top, brushing each with olive oil.

  8. Fold edges creatively

  9. Bake @ 350 ‘til brown.

  10. Serve with family & Friends.
