Very Bad Baby Pie

Ingredients:

  • 1 pie crust

  • 3 tbsp. butter

  • 1 cup fine chopped onions

  • ¼ c thinly sliced leeks

  • ¼ c thin sliced green onions

  • 1 cup grated cheddar

  • 1 cup cooked, thick bacon

  • 4 large eggs

  • 2 cups half and half

  • 1 tsp. salt

  • ½ tsp. white pepper

Directions:

  1. Preheat oven to 400°.

  2. Prepare homemade or store-bought crust, according to directions.

  3. Put dough in pie plate, pierce a couple of times with fork and bake for 10 minutes.

  4. If crust bubbles, gently push down. If edges start to burn, cover with foil.

  5. Reduce heat to 350°.

  6. Melt butter in pan and sauté onions, leeks, and green onions until caramelized.

  7. Sprinkle onions on the bottom of the pie crust, then add bacon and cheese.

  8. In bowl, slightly beat eggs. Add half and half, salt and pepper, and blend.

  9. Pour over mixture in pie crust.

  10. Bake 45 minutes or until knife inserted comes out clean (could take up to 60 mins).

  11. Let stand for 10 mins before serving.
