Yummy Vegan, Gluten-Free Fruit Crisp

 

Ingredients:

  • Fresh fruit (or frozen berries) such as sliced peaches, blueberries, or sliced apples (dried cranberries optional)

  • Oatmeal

  • Olive oil

  • Honey

  • Vanilla

  • Cinnamon

  • Optional for topping: coconut, chopped nuts, sesame or sunflower seeds

Directions:

  1. Fill baking dish ¾ the way with sliced fruit or berries tossed with cinnamon. Optional: cloves, nutmeg &/or sugar

  2. Top with oatmeal topping: heat ½ cup olive oil & ½ cup honey, 1 tsp vanilla, cinnamon to taste.

  3. 1 minute in microwave – mix.

  4. Toss in oatmeal (approx 2-3 cups) & moisten in oil/honey mixture.

  5. Add optional ingredients here.

  6. Put topping onto fruit.

  7. Bake 350 degrees until top is crisp.

  8. Best served warm with ice cream as dessert or with yogurt as breakfast.

  9. To be gluten-free must use gluten-free oats.
